Prof Derek Stewart

Derek is Professor of Food Chemistry (0.2FTE) in the Institute of Mechanical, Process and Energy Engineering, and Business Sector Lead: Agri-Food at the James Hutton Institute, Dundee. Derek has over 30 years research experience in metabolomics of plant crops, linking plant composition to health benefits, the organoleptic basis of plant-derived foods and the valorization of agri-food waste streams. The latter waste valorization theme is the focus of his research at Heriot-Watt.
